Lavender Berry Mojito

School started this past week and the days are slowly getting shorter, a sure sign we will soon transition into fall. Even though I'm ready for some cooler weather and some rain, okay a lot of rain, I am not yet ready to say farewell to summer...just the extreme heat.

With the abundance of mint in my garden, I can continue to make this light cocktail which is not only refreshing but easy to make. Fresh mint and blueberries paired with our lavender syrup and lavender limeade turn the classic mojito into a special end-of-summer drink.

What you need:

  • 2 ounces Captain Morgan Light Rum
  • 1 ounce Lavender Cocktail Syrup
  • 1 lime freshly squeezed
  • 1 ounce fresh or frozen berries
  • 2-3 fresh mint leaves
  • Lady Bird Club Soda
  • Garnish with dehydrated lime and fresh mint
Directions:
Add lavender syrup, berries, lime juice, and mint leaves to a 16-ounce (highball glass). Using a muddler, muddle the mixture for 20-30 seconds. (This process releases the oils in the mint leaves while mashing the berries).
Add the rum to the muddled mixture and fill the glass with crushed ice. Top with club soda and stir well. Garnish with a dehydrated lime and a mint stem.
