Inspired by Lady Bird Johnson and the down-home hospitality of the LBJ Ranch, these zesty crackers are a Southern entertaining staple. Perfect on their own, alongside cheese boards, or as a crunchy side to a bowl of soup. They’re easy to make, hard to stop eating, and just the thing for your next get-together.
What you need:

- 2 cups spelt flour (this whole wheat flour has a slightly nutty taste)
- 1 cup (2 sticks) butter, cut into pieces
- 8 ounces (2 cups) sharp cheddar cheese, shredded
- 1 teaspoon cayenne pepper
- 1/2 teaspoon sea salt
- 2 cups Rice Crispies© cereal
Makes approximately 4 dozen.
Directions:
Preheat oven to Bake at 350°F.
- In a food processor, add the flour and butter. Pulse until well blended. Add cheese and seasonings. Again, pulse until well blended. Lastly, add the cereal and fold it into the mixture with a spatula.
- Drop by small rounds on a cookie sheet lined with parchment paper. Flatten with a spoon (that has been coated in flour).
- Bake for about 15 minutes. Don't allow wafers to get too brown.
