Fresh Kale & Fruit Salad

This hearty kale salad balances earthy greens with the sweet-tart pop of freeze-dried fruit and a silky maple-cider vinaigrette. This salad pairs well with the freeze-dried fruit for an energizing bite!

Vinaigrette:

  • 1/3 cup Extra Virgin Olive Oil
  • 1/4 cup Apple Cider vinegar
  • 2 TBS Pure Maple Syrup

What you need:

  • Fresh Kale (stems removed and leaves chopped or already chopped)
  • Freeze-dried apples
  • Freeze-dried cherries
  • Freeze-dried peaches
  • Pecans (optional)
  • 1 tbsp olive oil (to drizzle over kale)
  • Pinch of sea salt

Directions:

  1. Make the vinaigrette dressing and refrigerate.
  2. Place kale in a large bowl. Drizzle olive oil over the kale. Gently massage the kale with your fingers. Add a pinch of salt and massage the kale again. This step makes the kale taste so much better.

  4. Add pecans (if using). 
  5. Chill until ready to serve.
  6. Shake the vinaigrette and drizzle over the kale salad. Toss to incorporate and serve immediately.

Tips & Variations:

  • Add feta or goat cheese for a creamy contrast.
  • Sprinkle in pumpkin seeds for extra crunch.
  • Let the dressed kale sit 10–15 minutes if you want the fruit to soften slightly.
