This hearty kale salad balances earthy greens with the sweet-tart pop of freeze-dried fruit and a silky maple-cider vinaigrette. This salad pairs well with the freeze-dried fruit for an energizing bite!
Vinaigrette:
- 1/3 cup Extra Virgin Olive Oil
- 1/4 cup Apple Cider vinegar
- 2 TBS Pure Maple Syrup
What you need:
- Fresh Kale (stems removed and leaves chopped or already chopped)
- Freeze-dried apples
- Freeze-dried cherries
- Freeze-dried peaches
- Pecans (optional)
- 1 tbsp olive oil (to drizzle over kale)
- Pinch of sea salt
Directions:
- Make the vinaigrette dressing and refrigerate.
- Place kale in a large bowl. Drizzle olive oil over the kale. Gently massage the kale with your fingers. Add a pinch of salt and massage the kale again. This step makes the kale taste so much better.

- Add pecans (if using).
- Chill until ready to serve.
- Shake the vinaigrette and drizzle over the kale salad. Toss to incorporate and serve immediately.
Tips & Variations:
- Add feta or goat cheese for a creamy contrast.
- Sprinkle in pumpkin seeds for extra crunch.
- Let the dressed kale sit 10–15 minutes if you want the fruit to soften slightly.
