Juicy, sun-ripened tomatoes take center stage in this vibrant, summery salad. Lightly dressed in a refreshing vinaigrette, it's the perfect balance of sweet, tangy, and herbaceous that pairs beautifully with grilled meats, seafood, or crusty bread.

What you need:
- 4–5 ripe heirloom or vine-ripened tomatoes (variety of colors, sliced or wedged)
- ½ small red onion, thinly sliced
- ½ cup fresh mozzarella pearls or torn burrata (optional)
- Mixed Greens
- ¼ cup fresh basil or mint leaves, torn
- Sea salt & cracked black pepper to taste
Basil Syrup Vinaigrette:
- 1 tbsp Raider West Farms Basil Syrup, or try our Mint Syrup
- 2 tbsp White Balsamic or Dark Balsamic Vinegar
- 3 tbsp extra virgin olive oil
- Pinch of salt
Directions:
- Whisk vinaigrette: In a small bowl or jar, combine Basil Syrup, Vinegar, olive oil, and a pinch of salt. Shake or whisk until emulsified. Chill.
- Assemble salad: Arrange the mixed greens on a serving platter. Add the tomatoes, red onion, cheese (if using), and torn herbs.
- Drizzle vinaigrette over the salad just before serving.
- Finish with a sprinkle of sea salt and freshly cracked pepper.
