Fresh Tomato Salad with Basil Syrup Vinaigrette

What you need:

  • 4–5 ripe heirloom or vine-ripened tomatoes (variety of colors, sliced or wedged)
  • ½ small red onion, thinly sliced
  • ½ cup fresh mozzarella pearls or torn burrata (optional)
  • Mixed Greens
  • ¼ cup fresh basil or mint leaves, torn
  • Sea salt & cracked black pepper to taste

Basil Syrup Vinaigrette:

  • 1 tbsp Raider West Farms Basil Syrup, or try our Mint Syrup
  • 2 tbsp White Balsamic or Dark Balsamic Vinegar
  • 3 tbsp extra virgin olive oil
  • Pinch of salt

Directions:

  1. Whisk vinaigrette: In a small bowl or jar, combine Basil Syrup, Vinegar, olive oil, and a pinch of salt. Shake or whisk until emulsified. Chill.
  2. Assemble salad: Arrange the mixed greens on a serving platter. Add the tomatoes, red onion, cheese (if using), and torn herbs.
  3. Drizzle vinaigrette over the salad just before serving.
  4. Finish with a sprinkle of sea salt and freshly cracked pepper.
